Is there a way to do a diy hermes ( classic version ) remake ?

Yes, you can buy a chip and program it, I'm not sure of the legal status of the firmware, but is available on internet.

The programer, it's also a free design available on internet.

no !!

my old willem programmer ( parallelport ) is not working correctly anymore .

so the project is halted , as the componets needed to make a arduino shield are not available in my country and bying them at mouser will cost me € 50,- ( 26 euro shipping )

i need 5 hermes processors only

We have a wanted section for that, give it a post, I know some people here can program the chips!

How difficult would it be to port the MCS48 code to the MCS51 family? As a former Silicon Labs contractor I can supply as many SiLabs 8051 as anyone would ever want.

I have a parallel port Willem with the MCS48 adaptor. I have NEVER managed to program an 8749 with it but it will happily do an 8748? If you google MCS48 programmer and you come across matt millman's webpage, I use this to program 8749's without an issue. Hermes is not the only use of the 8749 as an 'original' image can be burnt too. I guess if you wouldn't mind building a small daughter board the 8049 or 8039 could have an external rom added
